Fog Harbor Pumpkin Bread Pudding Recipe

Fall is here! And that means cravings for pumpkin everything.

Executive chef, Adolfo Soto, created this incredible dessert our guests call “deliciously scrumptious” and “the perfect blend of spices and it practically melted in our mouths” – we can’t get enough of it either!

INGREDIENTS

8 cups     1″ sourdough cubes (crust removed)

2 tsp      butter

2 tsp       flour

1 cup      granulated sugar

1 tsp       baking soda

1 tsp       nutmeg ground

1 tsp       cinnamon ground

Pinch      salt

2 cups    canned pumpkin

2 tsp       dark rum

2 1/2 cups   heavy cream

5 each    eggs, medium

1 tsp       vanilla extract

1 cup      golden raisins

DIRECTIONS

Preheat oven to 350 degrees.

Place the bread cubes in a 10″ x 12″ x 4″ buttered and lightly floured baking dish.

Sift together the sugar, baking soda, nutmeg, cinnamon, and salt into a medium mixing bowl.

In another bowl beat the pumpkin, dark rum, heavy cream, eggs, and vanilla until well blended.

Add the dry ingredients to the wet and stir until well blended.

Stir in the raisins.

Pour mixture over the bread and toss until bread is coated. Cover baking dish tightly with foil.

Place the baking dish in a large baking pan. Pour enough hot water in the pan to come halfway up the sides of the baking dish.

Bake in oven for 60 minutes. Take the foil off and bake an additional 10 minutes or until toothpick inserted in the center comes out clean.

Cool and cut into 12 squares.

Serve warm with creme anglaise or vanilla ice cream. (Serves 12.)
